Chicken enchiladas:
12.5 oz can or cooked Chicken
1/2 c.Sour cream
sm. can Green chili
1/2 c. water
14 oz. Cream chicken soup
Corn tortillas cut up bite size
1 cupCheddar cheese
1/2 chopped Onions
Green sauce to top
Cooking can be very challenging when you are camping out
of your car. Having everything within easy reach will
make your life much easier. I prefer one dish recipes that
don't have a huge list of ingredients. Most of these
happen to be great comfort food too. I usually either
boil/cook my chicken before we go or use canned chicken
when I need to resupply our food. Handeling raw chicken
while camping is not something I like to do. I also prefer
to bake my bacon (350 degrees/~25 min) at home on a
stoneware bar pan, then just rewarm in the pan for
breakfast. It saves a ton of time, and again, you are not
handeling raw meat. Hope you enjoy some of my basic
camping recipes.
Tailgate Cookin'
Saute onion in a cast iron skillet (or pan). When soft add
green chilis, and chicken-heat through. Combine sour
cream, cream of chcken and water together, pour on
chicken mixture, heat until bubbling. Serve it topped with
cheese and green sauce. Makes about 4-5 servings.
Chicken & dumplings:
Bisquick pouch or box
12.5 oz or 1 1/2 c. Chicken
48 oz. Chicken broth
1/2 chopped Onion
grated med. carrot (optional)
Add onion (and carrot) to chicken broth. Bring to a boil. make
dumplings per instructions and drop spoonfuls into broth. Boil 10
minutes uncovered, then 10 minutes covered. Salt and pepper to
taste. Makes 5-6 servings.
Frito Pie:
Fritos
Chili
Cheese
Onions
Heat chili. Fill your bowl with Fritos then top with cheese and
onions. Smother with hot chili and enjoy!
option: Chili dog Frito pie- cut up hot
dogs and add them to the chili
Quesadillas:

Warm tortillas in a cast iron pan (this helps the cheese melt faster)
add cheese then chicken, onions and anything else you like. Top
with a second tortilla. Lightly brown one side, flip and brown the
other. Cut in 4 pieces and serve with hot sauce, sour cream or
guacamole if you have it.
ZoAnn Special:
2 packages Knorr Noodles (parmesan)
Lg pouchTuna
1 can Peas (w/onions & mushrooms)
Note: This recipe can be made a variety of ways. I prefer the Knorr
flavored noodles, and if you don't have milk you can subsitute water
and it doesn't effect the flavor-Parmesan is my favorite.
Cook noodles per instructions. Add tuna, then
gently stir in peas. Heat till warmed through.
Serve with Ritz crackers.
Pizza:
Spaghetti sauce
Boboli pizza crust
toppings: pepperoni, ham, onions, olives etc.
Mozzarella Cheese
Place crust face down in a heated cast iron skillet.
When warmed, flip over and add sauce, 1 cup cheese
and toppings of your choice. place lid on pan and heat
till cheese melts.
Note: keep heat med-low so you don't burn the bottom before
the cheese melts.
Mac/cheese/chili:
Deluxe Mac & cheese
2 cans Chili
Onions (optional)
Ritz crackers
Make macaroni according to directions. Add cheese
pouch and stir. You can heat the chili in a separate pan
or just move the mac over to one side to heat the chili.
Serve topped with onions if you like, and a side of Ritz
crackers. Serves 4
Note: the deluxe mac&cheese doesn't use milk, so it's easier to make camping
Bacon Breakfast Tacos:
6 eggs
6 tortillas
Thick sliced Bacon
Cheese
Hot sauce
Warm precooked bacon in cast iron skillet. Set aside.
Crack eggs in pan and scramble. Warm tortillas on extra
burner (if you have one) flipping several times. Add
bacon, cheese then eggs. Top with hot sauce. makes 6
tacos.
Put eggs on top of cheese to keep cheese in the taco. Also can add refried beans first.
Trout-in-foil:
fresh trout
(gutted, cut of head/tails)
lemon-pepper
fresh lemons
salt
butter
Place prepared trout on foil. Sprinkle inside with
salt, lemon-pepper, and butter. Slice lemons and
place inside fish. Seal pouch and cook over
campfire grate or near coals, turning a few times.
Check for doneness after 10-15 minutes, meat
should flake easily and be white. Garnish with
lemon and eat while hot!
Migas:
6-8 slices thick bacon
oil
8-10 corn tortillas (cut up bite-size)
1 can ro-tel (drained)
6 eggs
cheddar cheese
hot sauce
Cook bacon and remove from pan. If bacon is precooked
you may need to add some oil to the pan. Over med-high
heat cook tortillas till crispy, drain on paper towel and
set aside. Add rotel to pan and cook off any liquid. Add
eggs and scramble till half way cooked, then add in
bacon and tortillas. Cook till eggs are set. Top with
cheese. Serve in tortillas or a bowl.
